Grilled Chicken Wings with Overachiever (3 Ingredients)

There’s a certain kind of recipe that earns a permanent spot in the rotation at our house, and it’s usually the one with the shortest ingredient list. These grilled wings are exactly that: three ingredients, one hot grill, and about 20 minutes between “what should we make?” and a platter everyone’s hovering over.
The secret (if you can call it that) is Overachiever. We made it to make food taste more like itself, not to cover it up. So on wings, you get savory, well-seasoned chicken with crispy, charred skin and nothing fussy standing in the way. A quick toss in white vinegar helps the seasoning cling and gives each bite a little brightness.
No fryer, no oil splatter on the stovetop, no sauce to babysit. Just a good grill method and a shaker you probably already have in the cabinet.
Why This Method Works
The trick is using two zones of heat. Wings start skin side down over direct, high heat for about five minutes — that’s where the browning begins and the fat starts to render. Then they move up to the top rack (or over to the indirect side) skin side up, lid closed, so they cook through gently without burning.
A few things that help:
- Oil the grate well. Chicken skin loves to stick. A folded paper towel dipped in oil and held with long tongs does the job.
- Don’t rush the first five minutes. Let the wings release on their own before you move them; if they’re stuck, they’re not ready.
- Cook to temperature, not just time. Wings are safe at 165°F, but they get more crisp closer to 175–185°F, so don’t worry about going a few minutes longer.
- Finish over the flames. A final minute or two back on direct heat gives you those charred edges. Stay close — it happens fast.

Can I use whole wings? Sure, just add a few extra minutes on indirect heat and check the thickest part of the drum.
What if my grill doesn’t have a top rack? Turn off one side of a gas grill (or bank the coals to one side on charcoal) and move the wings to the cool side.
What should I serve with them? Wings are a crowd-pleaser, so keep sides easy: celery and carrot sticks, a big green salad, or grilled corn with another shake of Overachiever.
Can I make them in the oven instead? Roast on a rack set over a sheet pan at 425°F for 40–45 minutes, flipping halfway, then broil for a minute or two to crisp.

Grilled Overachiever Wings
In a large bowl, toss the wings with the vinegar and Overachiever until evenly coated.
Heat the grill on high.
Carefully oil the grill grate and add the chicken, skin side down. Cook on direct heat for 5 minutes, until browning begins.
Move the wings off direct heat to the top rack or indirect side, skin side up. Close the grill and cook another 10–15 minutes, until cooked through and browned to your liking.
Finish on direct heat for a minute or two to get more char. Serve hot.
